Beloved Chicago restaurant, Wishbone, was founded by Chef Joel Nickson in July 1990 at 1800 W. Grand Ave., featuring "southern reconstruction" cooking and a cozy atmosphere with 23 seats and art by his mother, Lia Nickson. A second location opened in 1992 at 1001 W. Washington, contributing to the West Loop's evolution into a culinary hotspot. In 1999, Nickson's brother, Guy, opened a third location at 3300 N. Lincoln Ave. in Roscoe Village. After 36 wonderful years, Wishbone closed its doors on August 28, 2026.
